Fruity black is a SWEET olive oil that uses local olives of the Aglando variety
Fruity black is obtained by maturing olives in the absence of oxygen,
in an airtight container, placed in a heated room.
After about 1 week, the olives are removed from the container
to extract the oil in a traditional way.
This process of artisanal preparation removes the bitterness with oil
and makes it possible to obtain a softer olive oil.
